San Mai with Curly Mango Handle - Gyuto / Utility Knife

This is a San Mai knife with a Curly Mango and Ironwood handle. In terms answering the question “what kind of knife is it?” it defies description, but if pushed I would say it has hints of a Japanese Gyuto or a utility knife - at least in terms of its appearance. However, because this beautiful knife has a thick blade, it is probably best suited to cutting cooked meat. It is not going to give you joy if you use it for fine-work unless your knife-skills are exceptional.

It has some 37 layers of steel. As the patina on the blade develops over time the patterns in the steel will become more distinct, making it even more interesting and characterful as time passes.

The blade is 5 ¾ “ long, which is 148mm, and 3.7mm thick at its thickest point.

The ironwood comes from the pulpit of a de-sanctified church. which will hopefully result in your food prep being blessed :)
