This is a chef knife-sized piece inspired by Japanese Gyuto knives. It is a workhorse that can be used for a range roles from cutting vegetables to meat and fish.

The blade is 7“ long, which is 18cm, and it is 2.3mm thick at its thickest point - which makes it a relatively thin blade.

The stainless steel blade is a pragmatic choice for foodies who cook a lot as it will stay in good shape with little effort.

The hexagonal handle is made from olive wood from where i formerly lived in the mountains of Andalusia. The memories of which I cherish for long walks with my husky and simple but amazing food and wine.

I make my hexagonal handles with a twist that makes them different to traditional Japanese knives. And that is I round the bottom of the handle and soften the edges to make them more comfortable to use. I also soften the end of the top of the handle to make it a more ergonomic fit in the hand. The idea is the hexagon by the blade morphs into a tube as you move to the end of the handle.

The bolster is made from ebony.
